Celery root soup
Creamy, smooth and peppery, this pureed hot soup offers comfort on a cold day. Both tasty and healthy, it’s rich in tooth-building vitamins and nutrients.

- Ingredients:
- 1 tablespoon butter
- 1 medium onion
- 1 clove garlic
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
- 1 celery root
- 1 large potato
- 4 cups vegetable stock
- 1 cup whipping cream
- Ground nutmeg
- Fresh dill
- Instructions:
- Chop onions. Peel potato, and then cut into cubes. Melt the butter over medium heat in a deep pot. Add chopped onion and cook for three minutes, stirring constantly. Add salt, pepper and minced garlic. Stir in celery root and potato, pouring stock over the mixture. Cook until vegetables are tender. Then, blend vegetables (by transferring to a blender or using a hand blender), and add cream and a pinch of nutmeg. Cook on high for 15 minutes, then serve with a garnish of dill.
